Quick pasta dinner

On the drive home from the run, my mind started thinking about what I was interested in having for dinner. Earlier at lunch, I visited a Chinese bakery and went a little overboard. It’s easy to do so, all things considered. I mean, each bun was less than a dollar, and oh so very tasty. I ended up getting three for lunch, knowing very well that doing so will give me less wiggle room for later meals. So, that leads up to the drive home. I don’t know what came over me, but I just felt like eating bacon.

Baaaaaaacon.

I knew it’d be easy to use since I already separated the strips long ago. I didn’t want to just plunk the strips into the microwave for some crispy strips. Easy, for sure, but kind of boring. My mind started wandering, and I imagined having bacon with a cup of steamed veggies. Now, this past weekend when friends were over they left behind a good amount of rotini: that spiral type off pasta. I figured I could somehow put it all together.

All right. So, I cut up the strips of bacon into 1″ pieces. I tossed them into a hot saucepan but immediately noticed that it was sticking to the bottom. Oops. I added a teaspoon of olive oil which made a world of difference. The grease was starting to come out, at which point I added a chopped onion. I covered the pan to let it all sweat a bit. Later I added half a cup of spaghetti sauce, half a cup of water, and a cup of frozen veggies. I let it all boil a little bit. I added some salt, pepper, basil, and oregano to adjust it. I like adding basil and oregano to any pasta sauces I make; the sauces would feel a little bit odd without them. Anyway, in the end, the results were really great. I mixed in 1.5 cups of pasta and ended up with what’s pictured below.

Sure, it looks like a lot, but by my calculations this wasn’t too rich at all. It certainly didn’t put me over any of my daily limits. I was able to slay my bacon craving. On top of all that, this was pretty easy to make. I think the hardest part was just frying the bacon and onions. Even then, it wasn’t labour intensive at all. After being tired from the run, putting together an easy meal is ideal, right? Easy, easy, easy.
